Grilled Salmon Ingredients:
1 lbs. salmon fillets
lemon pepper to taste
garlic powder to taste
salt to taste
1/3 cup soy sauce
1/3 cup light brown sugar
1/3 cup water
1/4 cup light olive oil
Directions:
Season salmon fillets with lemon pepper, garlic powder and salt.
In a small bowl, stir together soy sauce, brown sugar, water and oil until sugar is dissolved. Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours.
Preheat grill for medium heat.
Lightly oil grill grate. Place salmon on the preheated grill and discard marinade. Cook salmon for 6 to 8 minutes per side or until the fish flakes easily with a fork.
We made this tonight for dinner. To me, it taste just as good as any high scale restaurant or better. The salmon was tender, not dried out at all, and flaky. This recipe is so good and will be revisited often. I have to stay away from baked Irish potatoes, so we just had a side salad. It would also go well with steamed vegetables.

Today's note of gratitude may sound a little weird, but then I am a little weird. LOL! Anywho. I'm thankful for the day, my dad suggested that I take a photography course at school. He had this 1970 something Minolta camera and never really knew how to use it (all these years). There are SEVERAL family photos that are over exposed, under exposed or that funky orange color. I needed an elective for school and he wanted me to teach him how to use his camera. I enjoyed taking the class a lot more than I thought I would and it actually sparked my on going interest in photography. I did learn how to use my dad's camera and had some pretty good photos developed from it. To this day, you'll see some of my photo posts. I am still learning new tips and effects. Not too long ago, my dad gave me his old Minolta camera. The film camera that started my photo taking hobby. Thanks Dad! I love you!
What You'll Need:
- scrapbook paper in the colors of the season
- Spellbinders Set of maple leaves
- Wizard or Double-Do XL cutting and embossing machines
- stick glue
- sewing machine and matching thread
Instructions:
1. For each leaf you need to cut out 10 shapes (5 reversed). Because one side of the paper is white, glue 2 leaves back to back so that both sides are printed. When finished, you will have 5 sets of “doubled leaves”.
2. Line the leaves up in a stack and paper clip the sides together to hold in place.
3. Sew a straight line down the center of the stack to sew the leaves together and remove from the machine.
4. Cut away the excess bottom thread. Use the top thread to hang the leaves up.
What You'll Need:

mod podge for sealer
Salt Dough Recipe 4 cups flour 1 cup salt 1 1/2 - 2 cups water extra flour for kneading
Mix first 3 ingredients together to form a nice soft dough. Knead smooth with extra flour. The more you knead this dough the easier it is to work with.
Keep leftover dough in the fridge.
Instructions:
Make up your salt dough. This recipe will make enough for 8 rounds.
Roll out dough and the using circular container or bowl, (coffee can) cut your rounds.
Pick a leaf for your design. I initially tried this with fresh leaves but they did not leave a good imprint. I think it would have worked with clay.
The silk leaves leave a better impression in the salt dough.
Place where you want it and press the leaf into the dough.
When you lift it off you should have a nice impression.
Place on a parchment or foil covered cookie sheet and bake at 250 degrees for about 2 - 3 hours or until hard.
Let cool.
Take some acrylic paint in Autumn colors.
After trial and error I found the best way to paint these is to paint the leaves in different colors first.
Let dry.
Then using dark brown paint that you have watered down apply a wash, like an antiquing glaze to the entire surface. The dark color picks up the veining in the leaf and still lets the Autumn color show thru.
Let dry and then apply a coat of glossy Mod Podge as a sealer.
I'm thankful for having the opportunity to stay at home with my children. It's been a struggle at times, but we have been able to manage. My husband and I knew it was the right thing for our family and we have absolutely no regrets. Sure, like any mother, I do get frustrated and hold my breath when money gets tight. We couldn't have made it without God bringing us through our good and bad times.
1/2 cup butter
1 cup sugar
1 egg, lightly beaten
1 teaspoon vanilla extract
2 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Vanilla frosting
Green fruit leather
M&M's or Reese's Pieces candies
Using an electric beater, cream the butter and sugar in a large bowl. Add the egg and vanilla extract and mix well. In another bowl, combine the flour, baking powder, and salt. Mix in the flour a little at a time until the ingredients are well combined. Chill the dough for several hours or overnight.
Heat the oven to 350 degrees. Divide the dough into 3 parts. Working on a floured surface with one part at a time, roll out the dough to a 1/4-inch thickness. Using a knife, cut out corncob shapes about 4 inches long. Place the cookies on ungreased baking sheets and bake for 9 minutes or just until the edges brown. Let the cookies set on the sheets for about 2 minutes, then transfer them to a wire rack to cool completely.
Frost the cooled cookies. Next, use kitchen shears to cut husks from the fruit leather to fit the sides of each cookie. Press the husks in place atop the frosting, with the tips down a bit. Now fill in the middle with candy kernels gently pressed into place. Makes about 1 1/2 dozen cookies.

King Cake Recipe
Ingredients:
1 roll frozen bread dough, thawed
8 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon lemon extract
Confectioner’s Icing
1-1/2 cups confectioner’s sugar
3 tablespoons milk (more if needed but stir this amount first, you’ll be surprised how far this goes!)
1 tsp clear butter or vanilla flavoring
On floured surface, roll out your dough to a rectangle of about 10 x 18 inches. It doesn’t have to be exact, close enough works!
In a mixing bowl, combine cream cheese, powdered sugar, and extract and mix until creamy and well blended. Spread over dough to within an inch of each side. Roll up longways (to make a long log) and brush the final edge with water before pressing it into the log to seal.
Take log and form into a circle, pressing the ends into each other and brushing with water if needed to seal together. Spray top lightly with cooking spray and cover with plastic wrap. Set in warm place to rise for 45 minute to an hour.
Remove plastic wrap and bake in 350 degree oven for 30-35 minutes. Allow to cool.
Mix confectioner’s glaze and drizzle over top of cake with a spoon. Immediately sprinkle colored sprinkles over glaze if desired. Allow to sit until glaze hardens.

Tex-Mex Dip with Spooky Tortilla Chips Supplied by Taste of Home
Yield: approx. 9 cups dip and 5 dz. chips
Ingredients
20 flour tortillas (8")
1/2 to 1 tsp seasoned salt
2 cans (9 oz. each) bean dip
3 medium ripe avocados, peeled
2 Tbsp lemon juice
1/2 tsp salt
1/4 tsp pepper
1 c (8 oz.) sour cream
1/2 c mayonnaise
1 envelope taco seasoning
2 c (8 oz.) shredded cheddar cheese
1 c sliced ripe olives
4 green onions, sliced
1 large tomato, seeded and chopped
Directions
Cut tortillas with a ghost or pumpkin shaped 3 1/2" cookie cutter. Place on baking sheets coated with cooking spray. Spritz tortillas with cooking spray; sprinkle with seasoned salt. Bake at 350 degrees for 5-8 minutes or until edges just begin to brown. Remove to wire racks.
Spread bean dip onto a 12" serving plate. In a small bowl, mash avocados with lemon juice, salt and pepper; spread over bean dip. In a small bowl, combine the sour cream, mayonnaise and taco seasoning; spread over avocado layer. Sprinkle with cheese, olives, onions and tomato. Serve immediately with tortilla chips.
Halloween Decoration Crafts
Katie and I have the Halloween fever. I think it's because of all this cooler weather we've had these past few days. This past week, the lows were in the upper 60s and highs were in the lower 90s. The wind has been blowing, causing some of our leaves to shower the ground. Tomorrow's high is suppose to be 89 degrees. YAY! I love it. Tonight, we were glued to Disney's Family Craft website. We're going to try to make some "Paper Bag Creepy Trees and Salt Dough Ghost" for Halloween either tomorrow or sometime this week. Here's the video for the instructions:

Want a spine tingling wait to raise your kids spirit this Halloween. I'm Penelope Hsu at the craft table with family fun. Make these paper bag trees in salt dough ghost to haunt your house with spooky scenes.
For paper bag trees you'll need a medium size brown grocery bag, scissors, a small beverage bottle, and pebbles for weights. Cut off in this part of the bottom of a medium size brown grocery bag then slit open one side so you have a rectangle and open it up. Place a small beverage bottle on the center of it. Gather the paper around the bottle and twist it around the neck. Snip down from the top to create several strips that will become limbs twist them within 3-4 inches from the end. Snip the untwisted ends as you did previously and twist them into finer branches. Remove the bottle and fill the trunk with pebbles or other weights. Finally re twist the trunk shut. To make 6 salt dough ghosts you'll need 1 cup of flour, 1 cup of salt, half a cup of water, a wooden spoon and bowl and a fine point permanent black marker. Combine the flour, salt and water in a bowl. Stir the mixture with a wooden spoon until smooth divide the dough equally and shape each piece into ghost keeping the base flat so it will stand up. Microwave the ghost on a plate 1 or 2 at a time at 20-30 seconds intervals until the dough is fairly firm about 1-2 minutes total. Let the ghost cool they can get quite hot, use a fine point permanent black marker to draw on eyes and a mouth. Now add your ghost and trees to the table for a chilling conversation piece.
Katie is so excited about making these ghost. The recipe makes about 6 cute ghosts. I have all the ingredients, I just hope we'll have time to make them up before the end of the week.
Katie and I also agree that we might have to make a few of these creepy crawlers for her classmates at school and ballet friends. Too cute and sounds so simple. I LOVE SIMPLE!
STIR in tomatoes and water; cover. Bring to boil. Stir in Macaroni and the Cheese Sauce Mix; simmer, covered, on medium-low heat 10 min. Stir.
TOP with shredded cheese. Remove from heat. Let stand, covered, 5 min. or until cheese is melted.

I've had Katie's dress-up boxes down from her closet for the past couple of days. She's had a ball, dressing up and modeling in front of her dad and I. Last night, she discovered her microphones, so she wanted to do a concert for Colton and myself this morning. What got me tickled was how Colton was playing with his microphone. I didn't get it on tape, but he was dancing with his mouth on top of the mic. You should have seen his eyes (shocked) when he accidentally pressed the button on the Little Mermaid mic. Too cute!
Quick Colton Story
I was so proud of him this morning. During our playtime, I handed him a small stuffed cow. He took it from my hand and put it in his F-P barn. I was shocked, but it's encouraging that he is paying attention to our playtime. He knew where that cow belonged. Also, he picked up one of his balls and put it in his ball pit. He is beginning to enjoy books more now. I'll catch him getting out one of his books and just look at the pictures. In the mornings, he'll sit and watch Sesame Street while eating his breakfast.
Diva's Ready For School
Doug and I have knocked out Diva's school supply list, except for the nap mat. The school has the soft cloth mats with pillows available to purchase for $25. The secretary said they haven't come in yet, but they are very nice with velcro closure. I don't have to purchase theirs, but I don't see why not especially for that price. I ordered her backpack from Mountain Sports the other day. I think Katie will like her new mesh backpack, I just hope it won't swallow her up too much. HAHA! I know little "C" had a backpack similar to this one, she could handle it somewhat and she was a first grader this past school year. Hey, at least we know she'll grow into it. Here's a picture of the backpack, we should get it sometime today.
We have our school Open House on Friday, August 6th. Lord willing, we'll get our letter so we will know who Katie's teacher will be by that time. HAHA! The school secretary assured me that we should receive the letter with all the information by the last week of July. Talk about waiting until the last minute because the first day of school is August 10th. Oh well, I just like having my ducks in a row.
I plan to take Katie school clothes shopping next week. I guess, I shouldn't say "school clothes", but school shoes and anything she needs right now shopping. LOL! Her Summer clothes and sandals are still in good condition, so I don't think I'll be getting any new. If I find a really good deal on Fall/Winter outfits, I might get them in the next size up. I say this because I went overboard at the beginning of school last year and she ended up going up a size before she got to wear her Fall/Winter clothes. Last school year, she jumped two sizes before the year was over. Ugh! So, I've learned my lesson and plan to either go up one size or wait until she has out grown her other outfits.
The Children's Place has a great deal right now on jeans and t-shirts. Their jeans/pants are regular $16.50, but they are on sale for $10. You can't get them that cheap at Walmart and they hold up very well. The great thing about their jeans is they have the inside adjustable button sides, which is great for little waists, but long legs. Long legs, but small waists has been our problem in the past and I love getting the adjustable inside buttoned pants. You've got to check it out.
If The Shoe Fits, Etc. is currently having a 50% off sale on all clearance shoes and sandals. There are some really good deals. It would be great, if you knew what size your little one would be next Spring and Summer.

Ingredients
1 roll (18 oz.) refrigerated sugar cookie dough
2/3 cup flour
3 cups prepared vanilla frosting
¼ cup prepared chocolate frosting
1 cup M&M’S® Brand Chocolate Candies
¼ cup M&M’S® Brand MINIS® Chocolate Candies
Yellow and green food coloring
Baking sheet
Spatula
2 resealable plastic bags
Microwave-safe bowl
Directions:
Preheat oven to 350°F. Line the baking sheet with parchment paper.
Knead the sugar cookie dough and flour until smooth. On a lightly floured surface, roll out the dough to a scant 1/4-inch thickness. Cut out the shapes, re-rolling the scraps if necessary. Then, use the spatula to transfer the shapes to the prepared baking sheet.
Bake for 12-15 minutes, or until golden brown. Remove from the oven, transfer to a wire rack, and let cool completely.
Tint 1/2 cup of the vanilla frosting green, place it into a resealable plastic bag, snip off a small corner, and set aside. Tint the remaining vanilla frosting yellow, and place it in a microwave-safe bowl. Heat for about 10-20 seconds, stirring every 5 seconds until the consistency of slightly whipped cream.
Spoon the heated frosting over the cookies one at a time—completely covering each one. You may have to scrape up excess frosting and reheat it to cover all the cookies. Let the frosting dry for about 30 minutes, then carefully remove the cookies from the rack and scrape any excess frosting from the edges.
Spoon the chocolate frosting into one of the resealable plastic bags. Snip a small hole from the corner and pipe frosting for decoration. Then, using the photo as a guide, add M&M’S® Brand Chocolate Candies. Finish by snipping a small hole from a corner of the plastic bag with the green frosting and piping on the names.
Tip:
To eliminate frosting from the recipe, just add 3 or 4 drops of yellow food coloring to the dough while kneading in the flour. Then, once the cookies have cooled, adhere the M&M’S® Milk Chocolate Candies to the cookies using dots of decorating frosting. Kids love to be involved. Many steps in this recipe are perfect for kids of all ages:
Children as young as two can help with measuring and mixing ingredients. Filling measuring cups with the ingredients and kneading the dough can remind them of activities they already do on a day-to-day basis.
Children who are older will love rolling out the dough. Of course, when it comes time to cut the cookies everyone can lend a hand.
Remember, decorating is a personal expression. Everyone will love sharing their creations with family and friends.
Prayer Request
A high school friend and his wife have had trouble, like Doug and I, starting a family. After trying and stressing, God heard their many prayers and blessed them with a little girl about 3 years ago. Well, J told me how he and his wife would like to have one more child before they called it quits. They were very happy to finally get pregnant again. Unfortunately, J emailed everyone stating that their little boy "Grant Elijah" was born to heaven on July 10th. I can't begin to imagine what they must be going through right now. His facebook is flooded with regrets and supportive messages from his family and friends. Please ask God to lift him and his family up in your prayers. If he didn't live so far away, I'd give him a big ol' hug. J is a man of God and his faith has kept him going, but he is still a man with pain in his heart.
A family member is having a hard time dealing with their ailment. The meds her doctor put her on is making her hallucinate, which is one of the many side-effects. We just hope that he will change them because she said she can't take it anymore.
I get frequent newsletters from Betty Crocker website with the latest and greatest new recipes. I love checking them out for new ideas. Well today, I received this great looking recipe which comes at a perfect time of year - cool refreshing desserts. The recipe below already received 5 stars and it sounds really delicious.
Frozen Banana-Split Dessert Recipe
2/3 cup crushed chocolate graham crackers (8 squares)
1. Spray 8-inch square pan with cooking spray. In small bowl, mix crushed crackers and 2 tablespoons sugar. Stir in melted butter until crumbly and well blended. Press mixture in bottom of pan. Freeze about 10 minutes or until set.
2. Meanwhile, in 2-quart saucepan, mix pudding mix, 1/2 cup sugar and the milk with wire whisk. Cook over medium heat, stirring constantly, until mixture comes to a full boil. Cool 10 minutes at room temperature. Refrigerate 30 minutes.
3. Stir bananas into pudding. Fold in 1 cup of the whipped topping. Spread over crust. Freeze at least 3 hours or overnight.
4. Cut into serving pieces; place on dessert plates. Top each piece with 2 teaspoons hot fudge topping, generous tablespoonful of remaining whipped topping, 2 tablespoons strawberries, 2 tablespoons pineapple. Serve immediately.
One of many benefits to Summer is the garden fresh produce. I've been lovin' the squash, cucumbers, tomatoes and corn that we've received from relatives and neighbors. Two things I've been hungry for that's squash casserole and creamy cucumber salad. I've never made either one before, so why not today. I found two 4 star recipes online and thought I would try them out.
I have to say, I absolutely LOVE the Squash Casserole that I got from one of my favorite chefs, The Mrs. Paula Deen. I just love her! This dish is to die for, it is so good.
Squash Casserole

Prep time: 25 min.
Cook Time: 55 min.
Level: Easy
Serves: 6 servings
Ingredients:
6 C large diced yellow squash and zucchini
Vegetable oil
1 large onion, chopped (I used a sweet Vidalia Onion)
4 T butter
1/2 C sour cream
1 t House seasoning, recipe follows
1 C grated cheddar cheese (I used mild cheddar)
1 C crushed butter crackers (I used Ritz crackers)
Directions:
Preheat oven to 350 degrees F.
Saute the squash in large skillet with a little vegetable oil over medium-low heat until it has completely broken down, about 15 to 20 minutes. Line a colander with a clean tea towel. (I used cheese cloth). Place the cooked squash in the lined colander. Squeeze excess moisture from the squash. Set aside.
In a medium size skillet (I used the same skillet that I cooked the squash), saute the onion in butter for 5 minutes. Remove from pan and mix all ingredients together except cracker crumbs. Pour mixture into a buttered casserole dish (I used Butter flavor Pam spray) and top with cracker crumbs. Bake for 25 to 30 minutes.
Mirya's Notes: you can make this ahead of time without cooking, just place it (without crumbs) into the fridge until you need it.
House Seasoning:
1 C salt
1/4 C black pepper
1/4 C garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.
Yield: 1 1/2 cups
The creamy cucumber salad reminded me of my grandma Godfrey and my moms, if not just like it. To me, it's good and refreshing to eat on a hot Summer day. You have to have the taste to appreciate it or not like it at all. Doug said it was alright, but prefers cucumbers and Ranch dressing, which is good as well.
Ingredients:
1 C sour cream
1/4 C sugar
2 T distilled white vinegar
1 t dried dill weed
1/2 t salt
1/2 t ground black pepper
4 large cucumbers, peeled and thinly sliced
1 medium sweet onion, thinly sliced (optional)
Directions:
In a mixing bowl, whisk together sour cream, sugar, vinegar, dill, salt and pepper.
In a separate large mixing bowl, toss together cucumbers and onions.
Pour sour cream mixture over top and mix together.
Chill at least 1 hour before serving.
I was in a cooking mood. So, Peggy and Millard came over after church for a little bite to eat. They are all the time having us over for supper during the week and she's the one that works. I thought I would repay the favor. We had the squash casserole, creamy cucumber salad, potato salad, fresh corn on the cob and cherry pie with vanilla ice cream for dessert. Yum Yum! It was so good.
I just can't come up with that perfect title today because so much went on today. First, I've got to ask you. What will a woman suffering from severe cabin fever do on a snowy day? She gets out on the snowy roads, while it's nice and wet in 29 degree weather. LOL!
For the past couple of days, we were forecasted to receive a dusting to 1 inch of snow. They said the snow would begin at 4 AM this morning. How disappointed I was to wake up at 6 AM to no snow. About an hour later, it made it's appearance but not too hard. By 9:30 AM, the snow was here and let everyone know it.
Katie had a blast playing in the cold wet snow with her daddy. Katie had to make a snow angel, while dad threw snow balls.
Today was Katie's Valentine's Day party at school. Those little kids had a blast at their Valentine's party. When I walked in at 10 AM, there were children running all over the place. Mrs. Katie didn't know what had gotten into the kids, to make them act so WILD. They were just so excited! As you know, Katie and I made Oreo Kisses and Red Velvet Bon-Bons for the party. I told Doug last night, I will never do that again. I mean, what was I thinking? Making two different desserts that require chocolate dipping, while I had both children in the house with me and no one watching them. I thought it could be done. Well, it got done, but I'm missing a few nerves, hair and I've got this wild look going on. When Doug walked into the house yesterday, took a look on the Dining Room table (all the bon-bons and cookies), Colton crying, Katie acting her wild self and me with my "I've lost my freakin' mind" look going on and he began laughing. Now, why he was laughing, I will never know. In fact, I don't think I want to know, I can just imagine. I think if Colton was a little older, Katie wouldn't act like a ADHD child, it may have gone a little better. It took me all day, but I got them made. I have say, THEY WERE A HIT! Laura - you were right. You can't eat just one Red Velvet Cake Bon-Bon. That's exactly what Mrs. Katie told me as she was eating her 8th one. (Just kidding) It was probably her 7th. HA HA! I wished the Oreo Kisses would have made more than just 33 cookies. I guess I know now, I'll have to make 2 batches for parties. Everyone had a fit when they found out that I made them. Of course, everyone asked me for the recipes. They couldn't get over how easy and simple they were. Mrs. Katie has nicknamed me "Martha Stewart." HA HA! If she only saw me the night before. Shew! I have just enough Red Velvet Bon Bons to give to mom, dad, Peggy, Millard, me and Doug. Katie really like the Oreo Kisses, but they went FAST. Momma's little Betty Crocker Mom's kitchen helper. How do you like our ensemble? I noticed on "Regis & Kelly", a guest baker wore a head scarf while cooking. Have you seen these? They are scarves glued on a plastic headband. They've been on for quite sometime. I like them, but have yet to buy one. Doug makes fun of me for I begin cooking because I put my hair up in a ponytail and then put on a cloth headband, to keep the rest of my hair off my face. Bottomline, it's just good sense to pull as much hair back as possible. Katie liked wearing her bandana until it began falling off. I must not have tied it on good enough. She was so excited to wear her apron that Alise gave her for Christmas. It's so cute with a ballerina on the front. Here's my kiss. I think I made them too small because I cut the foil to the exact measured suggested and it just swolled up my kiss. Of well, this was my first try at it. I stacked 4 layers of the Red Velvet Cake Bon-Bons. I recommend them to any event! Here's an example of some of the special Valentine's gift boxes, I assembled. The Oreo Kisses didn't look exactly like a Hershey's Kiss, but it will do. They tasted so much better than they looked. All the children had to wait patiently for their Valentines from each child, holding their Valentine boxes in their laps. A new little girl, Katie, joined our school classroom this semester. I asked Mrs. Katie, if it gets a little confusing with the room full of Katies. She smiled and agreed. All the kids call the new Katie "little Katie," but Little Katie announced to everyone that she's big now. LOL! I thought that was so sweet. She's such a little bitty thang. Of course, Katie is sitting by her best bud, Claire. So cute! Believe it or not, I do fix Katie's hair. She had a pink bow in her hair, but she told me that she didn't want to wear it. I tried straightening her hair this morning because it was going every where. There are some days (lots) where her hair has so much body in it that you can't do anything with it, except put it up in a ponytail. After Katie's party, we dropped in on mom and dad. To wish them a wonderful Valentine's Day, we gave them a gift box filled with our yummy desserts. We visited a little while, until I could see outside that it was snowing much harder than earlier. I told mom, I wanted us to get home before it got any worse. On the news, they reported that we received just a trace of snow. Doug and I disagreed with them. We think, we got much more than just a trace. I'm sure, you will agree once you see the pictures.
