Grillin' Baby Back Ribs

Doug cooked a couple of slabs of baby back ribs for us Saturday night. They were delicious! I asked him how he did it. He told me his secret and I wanted to pass it along to you.

Grillin' Baby Back Ribs
  1. Rub in a little Big Bob Gibson's Dry Rub on the ribs and place them in a rib rack.
  2. Get your Weber Kettle Grill prepared - using a Weber Chimney Starter, get your charcoal nice and hot.  Once the top coals are hot (ashy white), they are ready to dump into the grill.
  3. Keeping the heat at around 300 degrees, he uses the indirect heat method to slow cook his ribs by placing the coals on one side of the grill and the meat on the other.  
  4. He likes to use a hickory wood chips for that hickory smoked flavor.
  5. It's time to put the ribs on the grill.  He left 2 slabs to cook for about 1 1/2 hours or until the meat begins to pull away from the bone.

My peach cobbler just came out of the oven

I made a peach cobbler for the fourth of July.  It is always so good and seems to be a favorite this time of year.  You would think that I would either buy the filling well in advance or make something else because I was fortunate to find the very last can of peach filling at the grocery store.  This happens to me every year when I decide {at the last minute} to make this dish.  We served it up with vanilla and chocolate (for me) ice creams. 

Easy Peach Cobbler
1 C Self-Rising Flour
1 C Sugar
1 C Milk
3/4 C Butter/Margarine
1 can Peach Pie Filling
  • Melt butter and pour into a casserole dish
  • Mix flour, sugar and milk and add to dish
  • Spoon in pie filling into the dish
  • Bake at 350 degrees for 1 hour
  • Note: I like to sprinkle a little cinnamon/sugar mixture on top as soon as it gets out of the oven.

We had a really nice 4th of July weekend.  It was nice to be just our little family for a few days.  Friday, we got out the Slip 'n Slide for Katie to play around on.  Once she got the hang of it, she absolutely loves it.  I've got a couple photos and video of her on the Slip 'n Slide for your viewing.  I stayed in the house with Colton because I knew he would want to be in the middle of it (to play), but he is too young and he wouldn't understand. 


Saturday, Doug started up the Slip 'n Slide again for Katie.  She had a blast!  It really wore her slap out that night.  Doug did let Colton watch her slide and he minded pretty well about staying in daddy's lap.  He whined a little, but I don't blame him.  I would want to get down and play in the water too.  Luckily, he was getting tired, so he went to bed while Katie finished playing.  Millard and Peggy stopped to see Katie's new bed.  This past week, we brought in Katie's box springs and added it to her mattress.  Her grandparents got her a new bed set (sheets, comforter, shams and bedskirt).  So I washed them up and put them on her bed.  Oh, she thinks she is a queen up so high on her twin bed.  LOL!  She told me that she loves it because she can see her TV better.  LOL!  Well, Doug had just gotten the ribs off the grill.  We asked them to stay and eat with us.  We didn't have much just ribs, corn on the cob, and watermelon.  So good!  I cut up a mango and let everyone try it.  It wasn't fully ripe but it was still sweet.

Yesterday, we went over to Millard and Peggy's for the day.  I haven't played horse shoes in I don't know how long.  Henry brought over his set and we played one game.  Henry and I were playing against Millard and Doug.  I couldn't believe it, our team won by 5 points!  Millard, Henry and myself all rang a 5 pointer between us.  It was a lot of fun, but according to Doug "it's got to be the longest horse shoe game in history".  LOL!  We all really stunk at the game, but it was lots of fun and we all laughed about it.  No competition just good ol' fun.  I told them that I could play with this group because if it was my brother-in-laws, I would have felt like a complete loser.  Colton was on cloud nine when he and his paw-paw went for rides in the Chuckwagon.  Doug got the idea of strapping his car seat in it.  Colton was content sitting up in his seat, while being driven around the plantation.  LOL!

That pic of Colton strapped into the Chuckwagon CRACKS.ME.UP!! OMG! That was hilarious!

When I don't buy Mrs. Smith's peach cobbler in the frozen section, I use the same recipe, but I use just a can of peaches instead. If you ever get in a bind about the peach filling, just try a can of peaches.
