Happy Birthday Emma!

I want to wish my great-niece, Emma, a very Happy Birthday!

I got to visit Mom last night. Her feet/ankles are still swollen and she wasn't feeling too good yesterday. Dad was a little upset because she didn't eat all that good. We are all afraid that if she doesn't eat good, they'll hook her back up to the feeding tube. She can't really say what's wrong, except she just feels "blah." Nothing hurts. Mom said she was in her wheel chair out in the hall and her nurse didn't even think she looked like she felt good, so she took her back to her room and put her to bed. She didn't get to go to therapy. Dad left soon after I got there. Mom felt bad that he left mad. I assured her that he wasn't mad, but really lonely. I told her how the company this past month has filled that void and now because they are all gone, he is lonely again. She perked up when I got out the computer for her to see pictures of Leslie's Graduation and family get-togethers. I told her stories about our weekend and visit with the Keyes family. By the time, we went through all the pictures and stories, it was getting late. The nurse said because of Mom's swelling in her feet/ankles, they are going to run some blood test today.

Italian Herb Chicken Recipe
1 pkg. McCormick Seasoning
2 1/2 lbs. Chicken Parts
1 pkg. (8 oz.) fresh mushrooms, halved or sliced
2 cans (14 1/2 oz. each) stewed tomatoes, undrained
1 can (6 oz.) tomato paste

  1. Place chicken and mushrooms in slow cooker.
  2. Mix Seasoning, tomatoes, and tomato paste until blended. Pour over chicken and mushrooms. Cover.
  3. Cook 8 hours on LOW or 4 hours on HIGH. Remove chicken and vegetables to serving platter. Stir sauce before serving.

IMPORTANT: For best results, do not remove cover during cooking.

NOTE: I like to use boneless, skinless chicken breasts for the chicken parts.

The recipe above is really good. I'm making this tonight for supper along with a pot of garden fresh new potatoes, can french cut green beans, crumbled bacon and seasoned with bacon drippings. I'm also going to boil some cabbage. It sounds so good.
